  • Young: wine made according to the process of carbonic maceration. The grapes are not subject to crushing, are placed in sealed vats and left for 5-20 days, depending on the case, the carbon dioxide that develops following a mild natural fermentation requires the grapes to produce glycerin, alcohol and other odorous components, in addition to demolish much of the malic acid, then pressing the grapes macerated it and starting the fermentation, the wine gets a fresh, soft, fruity, with a beautiful red color with violet hues, scents of the typical raspberry and strawberry. The new wines are bottled a couple of months after the harvest and keep for about six months.
